Taco Style Chicken Nite - Slow Cooker

Being a busy mom, my "crockpot" is my BEST FRIEND!!! 
Having over the years tried numerous recipes in it.  I can seriously tell you, it is NOT for stews, roasts and soups anymore!!

I love, love my rendition of "taco" in this crockpot favorite... ready for the recipe?

Normally I use boneless skinless chicken breasts made into tenderloin strips for this recipe...
However, I found an amazing deal on chicken drumsticks for .49lb, HELLO, MCCFLY????  STOCK UP TIME!!! 

So I made this recipe using chicken drumsticks and then at the end broiling them for a few minutes... (You know how silly chicken skin becomes in the crockpot)?  Well, we will have NONE of that!!!!!!!!!
We want the skin browned and crisp and full of flavor!!  This recipe will give you all of that plus... give working or busy mom's a break too!!!

Here we go;

Ingredients:

1 large package of chicken legs (8-10)
1 pkg of taco mix (or 1/4 cup of your favorite homemade mix)
1-2 medium peppers
1 medium onion
2 garlic cloves

1 16 Oz bottle of Taco Sauce
1 tbls cumin
1 cup water
1 tsp salt
Pinch of sugar
Few shakes of your favorite hot sauce

Green onions chopped fine *optional*


Directions:

Gather your ingredients, peppers, onions, garlic ... how simple is that??



Slice your veggie ingredients, your peppers and onions and garlic. Set aside.




In a ziplock bag, add your chicken legs, and sprinkle the dried taco mix over the legs.  Shake till all the legs have seasonings on them.





Place 1/2 of your peppers/onion mixture in the crockpot.  Add your chicken legs, cover with the rest of your peppers/onion mixture.
Pour your bottled taco sauce over the chicken legs and veggies.  Sprinkle the rest of your seasonings right over the top. 




Cover with lid, and set your crockpot on low for 8-9 hrs. 

(Worked/been busy all day, you just got home) - Place your purse on your favorite spot, take off your coat, kick off your shoes... SMELL THE AROMA!!!!  OH YES, WERE HOME!!!!!!
Enter the kitchen... wash your hands, and take a smidgen taste of the sauce and pepper slices!! 
"Okay, come-on, really"?  "Is it just ME who does this"? "Seriously, no really"?  "No one does this but I"?
Preheat oven to *broil*. 

Take chicken legs *only* out of crockpot.  Place on a baking sheet, and broil for 8-10 minutes, turning halfway till chicken *skin* is nicely browned!!

*Note you do not have to brown the chicken in the broiler if your using skinless, boneless chicken breasts cut into strips, or tenderloins.  The strips are perfect the way they are right out of the crockpot*

See how nice and crisp the chicken legs become when you put in the broiler just for a few minutes??  Oh yum, oh yum... I wanted to show you without sauce so you could see the crispiness...



Take out of the oven, and place on plate.  Drizzle extra cooked pepper/taco sauce from crockpot over chicken, side (rice or choice) and sprinkle with onions for extra fresh taste!!! 

Grab YOUR KNIFE, FORK, AND NAPKIN... DIG IN!!!!

Truly "delicious"!!!!

  2. Thank you KC!!!! It was sooooooooo darn good!! I think I liked this better to be honest than my normal boneless/skinless!! Something about the crispy skin, and the taco flavor coupled w/ the sauce and then the rice...

    OMG, was this good!!!
