It's been a while...



I apologize for not being here this past week.  Actually I was here, quite alot as a matter of fact, and I was "fighting with blogger", yes, yes I was...


I had three posts scheduled to post and THEY NEVER POSTED!!  Let me rephrase that, 1 posted, 1 is somewhere in cyberspace, and the last one is still on my pc.


My Mother's Day post is the one that has totally disappeared!!  The recipe for my winning Greek Island Chicken Saltimbocca posted, but posted "weird".  The tabs and margins are all wrong... <sigh> and it won't let me edit them.  I have to literally re-post it again, (another addition to my never ending list).
The third one is still on my pc but everytime I go to release it, it tells me it's already been posted.  Back and forth emails to blogger, which basically did not help me a peas worth!!
So my friends, this is what I've been dealing with this week.  I haven't forgotten you... how can I?  I mean I really, really, REALLY like you and all!! ;-)


Hubby is researching WordPress for me to move my blog there and I'm in the middle of all that.  My good friend and mentor Ann over at Coupons Deals and More has assured me she will direct me to a "techy" that will move everything over for me.  Which once she told me that, allowed me to breathe again.  Because between you and me I broke out into a sweat even considering how to do that..
So, I should be back to my regular postings with recipes soon.


Till then, a picture of last nights dinner.  It was such an amazing evening, warm, just a slight breeze... grilling was on the mind!!


Raspberry Chipotle Chicken

Of course it wouldn't be Didi's house if some kind of Greek wasn't involved!!  So I made a quick farmer's (aka horiatiki) Greek Salad.  "Farmers", meaning no lettuce is necessary...   So very, very good, simple and super fast too!  I used Feta and Blue crumbles for this salad, drizzled with good olive oil, a smidgen of white balsamic and pinch of pepper!  The flavor of the balsamic on the salad coupled with the raspberry chipotle chicken??  I gotta be honest with you guys, was "outta this world'!!


I will be posting the recipe for the Raspberry Chipotle chicken in the near future.

    1. Thank you Alex! The combo of the balsamic vinegar on the salad, coupled with the salty tanginess of the cheeses and then the raspberry smokiness of the chicken?? Oh man!!!!!
      As for blogger it's winning the fight and I'm not happy!!

  3. Are you posting straight from blogger or are you using something else? I used to have no end of trouble with blogger, then I switched to Windows Live Writer (it's probably already on your PC) and haven't had an issue since! And it makes writing posts easier in general!
    That chicken looks awesome! Yum!

  4. Looks marvelous Didi! Making my mouth water & I shouldn't be hungry at all!! Love the idea of the Farmer's Salad.

    Sorry to hear about the blog troubles. That can be so frustrating! Here's to everything being fixed soon, fast & then a breeze to use!! O, guess I should say the "here's to" is my glass of wine held up to the computer screen in I guess a sort of salute. ha! Hope it works!

  5. I wondered what happened to you :) Glad it wasn't anything serious...just frustrating, I know. I had an "encounter" with my internet yesterday that was driving me crazy. I think it's fixed now, tho :)

    That chicken looks yummy!!! I'll be waiting for the recipe for that!!

      I just don't have the tolerance to be quite honest with you for these technical issues. First and foremost I'm learning myself, and when things go wrong it takes me forever to figure out the lingo in order to first figure out what is wrong, and then attempt to fix it!! Grrrrrr

      Posted the recipe today, let me know, it's super easy and delicious!!
