My Recipe Journey I knew I wanted to make this recipe right away!! I gotta a hankering for meatloaf immediately I say!!
I promptly made this recipe that weekend. They were outta this world good I gotta be honest with you!!! This recipe is from my foodie friend Norma DeRemer. Here is the recipe:
They are moist, tender pieces of love!!!!
The only thing I did different was to add to the potato topping:
* add 3 roasted garlic cloves
* 1/2 cup of fat free half & half
* pinch of white pepper
* Used homemade au jus sauce instead of gravy
That's it. The rest I kept exactly as written. I wanted a creamier potato so I could pipe them on the mini meatloaves, and I used "muffin tins" for the meatloaves. Now mind you, there is a difference (I know, found out the hard way), between cupcake pans and muffins pans. The muffins pans are actually bigger, the cupcake pans are exactly that... who knew???
These will be absolutely perfect for a dinner party. Imagine the "ooohhhhhhs, and ahhhhhhh's" along with the compliments you will receive when your guests arrive to a platter of these???
