Maple Spiced Chicken Kebabs

Sweet & spicy morsels of goodness... trust me!!

So holiday entertaining is first and foremost in everyone's mind... well at least it's in mine!!
Now I love, absolutely ADORE to entertain, as you all know.  However, over the years, I have learned (the hard way by the way), that you can entertain, with amazing flair to boot, all without breaking the bank.
When I first started to entertain I would peruse over cookbooks and magazines, get the most outrageous "trendy" ingredients to make these goodies.  I would be out <gulp> a lot of money. 
Do you want to know what my guests would eat the most of?  Meatballs, pigs in a blanket, shrimp, cheese & crackers, a nice dip... 
WHAT?

So with experience and past trials my friends I am here to tell you, you can certainly entertain, and throw one heck of shin dig, all without breaking the bank.
Better yet, it's ingredients that most of us already have in the pantry, no I'm not joking...

With the recipe below I am using boneless skinless chicken breasts.  However this amazing marinade can be used with pork, beef or lamb.  What do you have on hand?  No need to go the store I say...
It's
the sweet/spicy marinade that makes this dish "out of this world" delicious.
So ready your abundant meat, make the marinade and get ready for the festivities!


Can just imagine your guests faces when you come out with a platter of these babies!!


Ready for a budget friendly entertaining recipe? 
Here we go;

Prep time: marinade time; 4 - 24 hours
Cook time: 45 minutes
Yield: 14 kebabs (skewers)

Ingredients:
3 boneless skinless chicken breasts (cubed)
1/2 cup "pure" maple syrup *see notes*
2 tbsp honey
juice of 1 orange
1/4 tsp cayenne pepper
1 tsp dried thyme
1/2 tsp kosher salt
1 1/2 tsp cumin
1 tsp onion powder

Notes: If you are don't have any pure maple syrup, can use the store brand ones, however I recommend half of the called for amount due to the amount of extra sweeteners. 

Directions:
Cube chicken and place in a medium bowl.  Add all the other ingredients and stir to mix.
Cover and place in fridge for 4 hours, overnight is best.



 When ready to bake. Using smaller un-soaked skewers (we're not pre-soaking the skewers because we are not grilling, were baking - YAY), thread chicken on skewers.


 


Continue threading chicken on skewers till all chicken is used.  For 3 chicken breasts my yield was 14 skewers. 
Plus, I don't make them small, I like a good bite.  If you want smaller pieces, you will yield more kebabs.




Preheat oven to 350F.

Take all of that amazing marinade and drizzle evenly over skewers. 




Place tray of skewers in oven and bake for 45 minutes (for chicken, adjust cooking times for other meat) turning over at the halfway mark. 

 

Turn off oven, take kebabs out of the oven and let your family and friends enjoy... better yet, pair with an amazing risotto or couscous platter, your guests will be in their culinary glory!
