Wonton Taco Bites

They are delicious!!

My love affair with all things mini, stuffed and wonton's continues...
It's East meets West and they fall in love!!  That's exactly what these little wonton taco bites are, a love affair!
As you know I love to entertain.  Presentation is key, isn't it?  We eat with our eyes first.  At least for me that is the case.  So imagine the delight in their eyes when you walk out with a platter of these wonton taco bites...

You have taco meat, cheese, a little extra heat all inside crispy little wontons.  Then we then sit them on a bed of shredded lettuce and the sour cream taco sauce.  Heaven!!  They are shaped to allow for a perfect pick up point, talk about "finger food"!!  Not to worry, I will show you how to make the shapes step by step.  Trust me, they are an easy, elegant and absolutely delicious appetizer.  Did I mention pretty budget friendly too?  I didn't?
I'm thinking... "game time"??

Ready for the recipe?  Here we go;

Prep time: 40 minutes
Cook time: 25-27 minutes
Yield: 52 appetizers

Ingredients Tacos:
1 package taco seasoning mix (1.25 OZ)
1lb ground beef
1 medium onion diced
1 1/2 cup Mexican shredded cheese
1 tsp Chipotle pepper
2/3 cup taco sauce
1 package wonton wrappers
1 cup water for basting
Shredded lettuce *optional*

Taco Sour Cream Sauce:
1 1/2 cup sour cream
1/2 cup taco sauce
1 tsp chili powder
1 1/2 tsp cumin
1/2 tsp salt
1 tbsp hotsauce

Directions:
-Using a large skillet, brown your ground beef till no longer pink.  Add your onions and saute till the onions become translucent, about 3 minutes.  Reserve 1 tsp of the taco seasoning mix, set aside. Add the remainder taco mix, your chipotle pepper and taco sauce.  Mix thoroughly, take off heat and let cool.

-In a small bowl, mix all your ingredients together for the taco sour cream sauce.  Place in refrigerator to chill.  While the sour cream sauce is chilling, the flavors are marrying and becoming super happy!

-Gather the rest of the ingredients, we should be ready to roll.

-Take one wonton wrapper and using your fingers or a small pastry brush, wet all around the four sides.

-Place 1 tbsp or so of taco meat and place in the center of the wonton wrapper.  Add 1 tsp of the cheese.  Now were going to play!! *grin*

-Looking down at your wonton, take the side away from you, and the side closest to you and bring them together and seal by pinching the ends closed.  Wonton's are so easy to work with.  They literally just adhere to themselves as long as they are watered.

-Now take either your right or left corner and bring it up to the center point.  Pinch shut.

-Repeat with the other corner, pinch shut.  Place on parchment lined baking sheet.

-Continue making the wonton bites till all the taco meat is used.

-Add 1/2 cup of water in a small bowl, add your reserved taco seasoning, stir to mix.  Baste your wonton bites with the seasoned water.

-Bake in a preheated 375F oven for 25-27 minutes till nicely crispy.

-Serve with the taco sour cream sauce, but before you serve them, well... snag a couple for yourself.  Cooks rules!!

Till next time!!

  2. So right up my alley Didi. You mentioned wontons, then love affair, sour cream and heaven. Those are my buzz words, so this is def a winner in my book. Gonna cut my egg roll wrappers in quarters to see if they work (they may be too thick), if not I have some round wontons that I'll just fold differently. And if I need your help, I know you'll be there cheering me on. They look so fabulous, and if I still didn't have my stomach ailment I'd be making them now. I shall report back :)
