Go ahead, grab your fork
Shrimp scampi... what's not to love? I know! You know when you come home after working or running around all day and you want something amazing to eat? Well this dinner is the ticket, trust me!!This recipe is so easy my friends, you can literally make it in less than 30 minutes. No, I'm not joking! A delicious shrimp scampi does not have to be difficult, time consuming nor are we going to be using exotic ingredients...
We're going to douse these succulent jumbo shrimp with garlic love, and just because I love pasta... we are going to serve them over Cappelini pasta. You can serve them with whatever pasta or side dish you like, I just have a fondness for thin pasta is all!! *grin*
I had 1lb of jumbo shrimp with shells & tails that my fish monger de-veined for me. However, I have made this recipe plenty of times with frozen uncooked jumbo shrimp as well. You just need to let them soak in cold water as you are prepping the rest of the meal (about 20 minutes) and you will still have dinner ready in less than 30 minutes. How cool is that right?
Prep time: 10 minutes
Cook time: 15 minutes
Yield: 4-6 servings
1 lb jumbo or extra large uncooked shrimp
3 tbsp butter (I used unsalted)
3 tbsp olive oil
6-8 garlic cloves, pressed or 3 tbsp minced jarred garlic
Zest & juice of 1 large lemon
1/4 cup fresh chopped parsley or 1 tbsp dried parsley
1/4 tsp dried dill
1 tsp red pepper flakes
1 tsp salt
1 lb of dry pasta your choice
-Place water in a large saucepan for pasta, add a pinch of salt and let it come to a full rolling bowl.
-Meanwhile, press your garlic, set aside. Zest and juice your lemon, set aside. Chop your fresh parsley if using and set aside.
-When pasta water is ready, drop in your pasta. Cook according to manufacturers' directions or till ala dente.
-About 5-6 minutes before the pasta is ready, in a large saute pan add your butter and olive oil over medium-high heat and allow butter to melt.
-Once butter has melted, add your chopped garlic and let it cook for about 1 minute or so till it becomes aromatic. Add in your parsley and dill, salt & red pepper flakes. Let it cook for 1 minute more. Your house will smell fantastic, trust me. That is the point when you call me on the phone and tell me dinner should be ready in 10!
-Add in your fresh lemon juice and zest. Bring to a simmer.
-Place your shrimp directly in this decadent sauce. Let cook for a few minutes on either side till the shrimp turn a beautiful pink. Remove shrimp from saucepan and keep warm, cover the scampi sauce.
We like to keep it spicy, yes? What?
-Plate your pasta and add as many shrimp per plate that you want. Sprinkle with a little bit of freshly grated Parmesan if desired (I so do desire).
Add a slice of lemon to your plate, well because it's delicious, good for you and it brightens up the plate, not to mention my goal in life is to make my children pucker! Serve with plenty of crusty bread to be able to mop up that amazing sauce.
