Lemon & Mint Couscous - Step by step video

This was absolutely delicious!  That amazing couscous cooked with lemon & mint and then topped with pine nuts and feta cheese...
It was out of this world good!

What I love even more about this recipe is the ease and versatility!  I mean it's quick and it's good, what's not to love, right?  I know

Ready for this quick and easy recipe?  Here we go;

Prep time: 10 minutes
Cook time: 10 minutes
Yield: 4-6 servings

1-1/4 cups Israeli Couscous
3 cloves garlic, sliced thin
2 tbsp mint, chopped
Zest of 1 lemon
2 cups chicken or vegetable stock
1/2 cups water
3 tbsp extra virgin olive oil
Salt & pepper to taste
2 tbsp pine nuts, toasted
1/4 cup crumbled feta cheese

How easy, right?  Everyday foods made easy, that's the name of my game!

I know your entire family will love this, especially served with a nice grilled meat, oh man, this dish totally enhances it!!
