Summertime Greek Chicken Salad

I know!!  Trust me, this was so darn good, if I wasn't so full I would have another plate.  That so didn't stop me from picking on the feta though! Ever feel so busy, stressed, tired and seriously do not know what to make for dinner?  Is it warm/hot outside and you don't want to heat up the kitchen?  Do you want something healthy, full of color and vibrant enough that the rugrats will love it as well? 



Look no further my friends!!  This salad fits the bill. Talk about the "Mediterranean Diet" to a tee!  You have, healthy, colorful and delicious all in one plate, in less than 20 minutes, and...
I cheated by using frozen grilled chicken strips, but you could certainly use 1 chicken breast with the same results!! Plus, you didn't warm up the kitchen!  How's that for dinner?  

Ready for this very simple recipe?

Yield: 4 dinner servings
Prep: 10 minutes

Cook: 10 minutes

Ingredients:
Dressing:
3/4 cup olive oil
Juice of 1 lemon
1/3 zest of the lemon
1 garlic clove, pressed (minced finely)
1/2 tsp salt
1/4 tsp black pepper
1 tsp dried oregano

Salad:
2 cups pre-cooked chicken strips, warmed thru (or 1 large chicken breast, grilled and sliced thin)
1 pkg arugula
1 pkg mixed greens
1 orange pepper, diced
4 green onions, diced, (omit whites)
1 cup tzatzaki sauce
1 cup Feta cheese, crumbled
1 tomato, quartered
1/2 cup pitted, Kalamata olives

Directions:
-Prepare your wet ingredients for the salad dressing by adding all your ingredients in a mason jar, shaking vigorously, and then set aside.

-In a large mixing bowl, add your greens and toss generously with your salad dressing, making sure all your greens are coated.  Divide salad greens evenly amongst 4 plates

-Add 1/4 of your tzatziki sauce over the greens on each plate, and then sprinkle about 1 tsp or so of feta cheese directly over the tzatzaki sauce. Making sure that you snag a chunk of feta cheese for yourself, don't you know!  *What*

-Add 1/4 of your green onions, tomatoes, peppers, and finally that amazing chicken!!  

-Sprinkle with the rest of the crumbled feta cheese, and add your olives well just because...
You know, it's Greek, and all.


Present to your family and be ready for accolades out the door!!
Heck, there aren't even any dishes for them to wash other than the bowl that you assembled your greens in!  I know!!
