Lemon & Mint Couscous - Step by step video



This was absolutely delicious!  That amazing couscous cooked with lemon & mint and then topped with pine nuts and feta cheese...
It was out of this world good!




What I love even more about this recipe is the ease and versatility!  I mean it's quick and it's good, what's not to love, right?  I know

Ready for this quick and easy recipe?  Here we go;

Prep time: 10 minutes
Cook time: 10 minutes
Yield: 4-6 servings

Ingredients: 
1-1/4 cups Israeli Couscous
3 cloves garlic, sliced thin
2 tbsp mint, chopped
Zest of 1 lemon
2 cups chicken or vegetable stock
1/2 cups water
3 tbsp extra virgin olive oil
Salt & pepper to taste
*optional* 
2 tbsp pine nuts, toasted
1/4 cup crumbled feta cheese

Pico/Queso Hot Hamburger Dip



I have to be honest with you, this was absolutely delicious!!  I seriously could of eaten the entire thing.  But, being the nice, decent mom that I was, I didn't.  Even though I did scour terribly at everyone while they were eating it while they kept asking me; "mom, honey what is it, what's wrong"?  I couldn't possibly tell them that I didn't want them eating the dip, of course, because, "hello McCfly", I made it for them, but...  
Sigh - a mother's love never ends!



I came up with this very simple recipe by using common ingredients, common recipes and combining them because quite honestly; half of my family loves pico de gallo, and the other half adores queso.  What's a mom to do I ask?  Aha, combine the two and add ground beef.  
That is exactly what I did my friends!  I wish I had another jalapeno for the picture, but I didn't, so just use your awesome imagination and pretend there are jalapeno slices and a few seeds floating around in the picture. Can you see it?  Oh good!!
Ready for the recipe?  Here we go;


Yield:  6-8 servings
Prep: 20 minutes
Cook: 10 minutes

Ingredients:
1lb ground beef, cooked, crumbled and drained
2 medium tomatoes, seeds removed and diced
1 medium red onion, diced
1 jalapeno, seeds removed and diced
2 tbsp fresh cilantro, chopped

2 jars queso, (16oz each) cheese dip
1 tsp onion powder
1 tsp adobo seasoning


Directions:
-After you have cooked your ground beef set aside.  Prep the tomatoes, cilantro, jalapeno  and finally red onion in a small bowl.  Add your onion powder and adobo seasoning.  Mix well and set aside.

-In a medium saucepan, pour in your queso, add in your crumbled ground beef and bring to a simmer.  About 1-2 minutes.  

-When the queso has just started to bubble and the hamburger has been warmed through, add in your pico ingredients.

-Bring to a simmer once more, and pour into your favorite bowl surrounded by tortilla chips!!  Don't forget to sample.  What?
The cheesiness, is that a word?  Coupled with the fresh tomatoes & onions are outstanding! Don't forget the kick of that jalapeno!  I know!




That was it, I know!  How easy, right?  The combination of the queso with the fresh Pico de gallo mix and the hamburger?  I'm telling you is heavenly!!  Easy, easy hot dip that your family and friends will enjoy no matter what the season!  However, it's even better in the summertime on your deck, don't you think?

Summertime Sausage Skewers


Two posts in one week right?  I know, I was as surprised as you are! However, these brats were so delicious I had to share with you. These little gems were filled thru and thru with swiss cheese. I think what I absolutely love most about them is that they are enclosed in natural casings, so the crunch as you bit into them was just a delicious prelude... 


Johnsonville was kind enough to provide me with these brats, and I wanted to make something different, that would be perfect for summertime.  I know when we think of grilling, most of us think of burgers, steaks, chicken.  Sure, sometimes we go outside the box with pork chops, or maybe a roast, even say salmon...
But what about skewers?  Especially skewers threaded with these amazing brat slices, wee cocktail onions and fresh pepper chunks.



The pickled cocktail onions compliment the swiss filled brats to a tee.  It's an explosion in your mouth to be honest with you.  Then add the freshness of the pepper chunks...
Well, need I say more?

Yield: 12 - 12" skewers
Prep: 15 minutes
Grill: 10-12 minutes


Ingredients:
1 package Johnsonville Swiss Butcher Brats
1 large fresh pepper (I used orange)
1 cup cocktail onions
1/3 cup olive oil
2 tbsp chopped fresh parsley
1/2 tsp salt & black pepper

Directions:
-Place your skewers in water so they don't burn when grilling.




-Slice your brats and set aside.  Slice peppers into chunks.

-Using a large plate, add the peppers and pour the olive oil over the peppers.  Add the parsley, salt & pepper and toss.



-Add the cocktail onions to the peppers, and toss them with the olive oil and fresh herbs as well.

-Thread the sausages, onions and peppers on the skewers.  Baste the top side using the olive oil and herb marinade and grill 10-12 minutes.  Turn halfway and baste the other side.  



Serve with your favorite side, or better yet, take one off and pop directly into your mouth before placing on a platter.  What?
Don't forget the edible flowers, they are chive flowers, aren't they pretty?

Thyme & Beer Braised Butcher Brats



I know, trust me!  I was asked by Johnsonville Sausages if I was willing to try their brand new line of "Butcher Sausages".  Well, you didn't have to ask me twice, I mean; "HELLO MCCFLY", I adore sausages, I mean adore them!  Well, let's re-phrase that.  I adore, "good, quality sausages", and Johnsonville, doesn't have the name for quality for nothing you know.  So jumping up and down like a giddy school girl I was till I received my coupons for the sausages. Off to my local store I went, and was thinking to myself, (scary I know).  "Self, what are you going to make with these absolutely natural casing brats that your hubby and children will love"?  "Ahhhaaaaa moment!!

So I put two an two together and got fourteen, yes, yes I did.  I never said math was my strong point did I? 



What goes together with brats, cheddar & bacon?  Common... I know you know!!  B-E-E-R!!  So this is how this recipe came about!  These butcher brats are just bursting with flavor, so easy and absolutely quick my friends!  


You can have dinner, literally ready in 45 minutes.  No, it's not 1/2 hour because then you will need assistants working in between commercials and before you came home to have prepped. In the REAL WORLD, it's called 45 minutes, and that my friends include prep and cooking!  So are you ready for this absolutely mouth watering and easy recipe that your hubby and family will absolutely love and might even give you 5 minutes to yourself before bedtime? You are?

Here we go!!

Yield:  4 Servings
Prep time: 10 minutes
Cook time: 15-20 minutes

Ingredients: 
1 pkg Johnsonville Cheddar & Bacon Butcher Brats
1 medium onion, cut into chunks
1 red pepper (or color of your choice), cut into chunks
1 bottle beer (your choice)
1/2 tsp salt
1/4 tsp black pepper
4-5 sprigs fresh thyme, or 1/2 tsp dried

Directions:
-Cut your brats, onions, peppers, set aside.  Look at the absolutely amazing cheddar cheese running right through each and every brat, all with natural casings, YES!!



-In a medium skillet, over medium high heat, add your beer along with your thyme sprigs, salt & pepper.  Let come to a simmer.

-Add in your peppers and onions, let cook for 5 minutes, then add in those luscious brat slices.  Semi-cover with lid, and let simmer for approximately 15-20 minutes till the casings are just starting to curl on the edges and the onions and peppers are tender but still firm. Does that make sense?  You don't want vegetables that are mushy do you?  I know, neither do I!

-Turn off heat and serve over your favorite side.  Familia's happen to be mashed potatoes, you knew that right? *sigh*


This was absolutely delicious my friends!  I have to be honest with you, over the mashed potatoes, it was beyond comfort food.  Well, let's put it this way, hubby was in his glory!!
