Chicken 'n Rice Soup


 What is it with the weather?  Seriously?  I mean I'm still in comfort food mode and it's almost the end of April!  Ugh!

Anyway, after perusing several cookbooks and my own blog, I pulled out chicken breasts with bone in.  It really does surprise me how much chicken we consume. 
I guess it's because it's a good for you lean protein, but above all, it's budget friendly for a family.  So back to the recipe.




I love simmering soups all day in the crockpot, I really do.  Honestly though, I hate the texture of the vegetables cooked all day.  I really do like a more vibrant vegetable, that you can actually still taste.  So on the cook top this soup will be made.
It's bursting with homemade stock, chunks of chicken, vegetables and then add in your rice.  With a simple delicious addition that will just make it over the top!
Yes, perfect comfort food!!

Ready for the recipe?  Here we go;

Prep time: 20 minutes
Cook time: 1 to 1-1/2 hours
Yield: 6-8 good servings

Ingredients:
3 chicken breasts with bone in
8 cups water + 2 cups water
2 tsp chicken base or 2 chicken bouillon cubes
1 large onion, diced
2 large celery stalks, diced
2 large carrots, diced
2 medium potatoes, peeled and diced
1/2 cup parsley, chopped
1 tsp dried tarragon
2 tsp salt
1 tsp pepper
1 tsp grated lemon zest
1-1/4 cups rice

Directions:  
-In a large stock pan add your chicken and water with salt & pepper.  Bring to a boil, then reduce heat to simmer and simmer chicken for 45 minutes.

-Remove chicken onto a plate.  Remove skin and bones.  Dice and add back into stock.  Some of the stock should have reduced by now.

-Pour in the additional water and add all your vegetables back into the soup, including  your tarragon and grated lemon zest.  Heat on high, and bring to a boil.

-When the soup is boiling, reduce heat to simmer. Let boil for about 10 minutes.

-Pour in your rice and parsley.  Let rice cook for about 15 minutes.  Adjust for seasonings. 




Ladle into your bowls and get ready for high fives.  Well, let's be serious, you won't get high fives.  You probably won't get anything but silence.  Which to me says the same as; "oh mom, this is delicious, wow"!
