Basil 'n Tomato Chicken


This was so good!  Absolutely one of the most moist chicken dishes I have had.  I know that the luscious seasoned basil with just a hint of Parmesan cheese, then topped with heirloom tomato slices, actually cocooned these babies up. 
Divine!  That being said, my pictures do not reflect how truly delicious this dish was.  If you have been reading my blog for a while, you know I always complain about the "lack" of daylight.  Well, I have to figure something out since my kitchen remodel.  We installed patio doors in the kitchen, and now during the day it's so bright, I love it!  However, taking food pics?  Hmm, I have to work on that...


This chicken dish is so easy to throw together, and it's baked.  So therefore, you can make it during the working week.

Ready for the recipe?  Here we go;

Prep time: 20 minutes
Bake Time: 55-60 minutes
Yield: 6 portions

Ingredients:
6 Boneless, Skinless Chicken Breasts   
2 cups basil leaves, whole, washed and dried
4 medium tomatoes, sliced (2 cups)
1/2 cup shaved Parmesan Cheese
1 tsp garlic powder
1 tsp salt
1 tsp dried thyme 
1/2 tsp red pepper flakes
1/4 cup olive oil

Directions: 
-Preheat oven to 350F.

 
-Using a 13 X 9 baking pan, pre-spray it with baking  spray and lay the chicken breasts in the pan.  Season with salt and pepper.

-In a medium bowl add basil leaves and season with the garlic powder and toss to incorporate. 

-Sprinkle seasoned basil leaves over the chicken.

-Place shaved Parmesan cheese slices over the basil and then the tomato slices over the cheese.  Sprinkle with dried thyme and drizzle with the olive oil.

-Bake uncovered for 55-60 minutes till chicken is cooked through.  Let rest for about 6-8 minutes and serve.

 
The family loved this dish.  I served it with Buttered Rice
