Banana Chip Muffins with Nut Topping


I felt like making something sweet today.  The day was so gloomy, cold and dark.  Plus we are supposed to get a snow storm,ugh.
I had cleaned the house yesterday, so today was my "prep" day and I wanted to do something other the usual lunches and extra dinners.  I felt like something "sweet".  "Where did that come from"?  I asked myself, because anyone who has been reading my blog for a bit knows I do not have a sweet tooth.  But I wanted something sweet, go figure...

 
I had played around and used so many recipes in the past it wasn't even funny.  But I had never found a good old fashioned banana muffin/bread recipe that was just perfect for my taste.  So I did what I usually do, I played around with various recipes, and I am here to tell you my friends.  This one is PERFECT!  It's bursting with bananas and chocolate chips, and the muffin itself is so darn moist, it's sinful!  Then we add whatever "nut" topping, on top.  I used cashews for these muffins, and the result is DECADENCE!!  I also love that they are "extra large".  I hate making a muffin recipe and the result is a very small muffin, drives me crazy!!  These muffins are "Didisized"!  <grin>

Ready for the simple recipe?  Here we go;

Prep time:  15 minutes
Bake time: 23-25 minutes
Yield: 12 extra large muffins

Ingredients:
2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1-1/3 cups mashed bananas (3 large)
1/2 cup (1 stick) butter, melted
1/3 cup buttermilk - I measured 2% milk and added 1/2 tsp vinegar
2 eggs, slightly beaten
1-1/2 tsp good vanilla
1 cup chocolate chips, (I used milk chocolate)
1/2 cup chopped nuts of your choice

Directions:
-Preheat oven to 375F.  Line muffin tin with paper liners, and spray with non stick cooking spray, set aside.

-Combine the flour, baking powder, baking soda and salt in a medium bowl.  Whisk a few times to make sure it's well mixed, set aside.

-Mash bananas, set aside.

-In a large mixing bowl, add the melted butter and sugar and cream using mixer till nicely incorporated and light golden color, about 1 minute or so.  Add the mashed bananas, buttermilk and vanilla, continue mixing.  

-Take 1 tsp of the flour mixture and sprinkle over your chocolate chips, and stir till they are all coated with flour.  This will ensure that the chocolate chips will not fall to the bottom of the muffin,  set aside till ready to use. 

-Slowly add in your flour, and mix till all your flour mixture has been used.  

-Fold in your chocolate chips.  Using a lare cookie scoop, scoop out dough into the paper liners, making sure they are all even in size and the dough has been used.

-Tap your muffin sheet a few times on your counter to ensure the air bubbles have been removed and sprinkle your nut topping evenly over all the muffins.

Bake for 23-25 minutes.  I used a dark muffin pan and it took almost 25 minutes, less about 25 seconds.  Check with cake tester or toothpick to ensure they are done.

-Cool in pans on wire racks for 5 minutes; remove to wire racks.  


As you can see my friends, very easy and I promise you, you will never have to look for another muffin/bread recipe again.  Plus they are "Didisized" - I know!!
